Watermelon Salad with Feta and Cucumber

This is a refreshing salad or meal for a hot summer day.  The watermelon replenishes your body with natural electrolytes and the feta cheese provides some needed fats and proteins to balance the nutrition of this meal.  One of my favorites for sure.

Ingredients

Salad Ingredients

  • 5 cups watermelon, cubed
  • 2 large cucumbers, peeled, sliced and quartered
  • 1 ¼ cups feta, cubed
  • 2 tablespoons fresh mint, finely chopped

Dressing Ingredients

Directions

  1. Make the dressing. Whisk the dressing ingredients together in a small bowl.
  2. Toss the salad. Toss the watermelon, cucumber, mint, and dressing in a large salad bowl.
  3. Add finishing touches. Add the feta and gently stir to combine. Garnish with additional mint if desired.
