Creamy Celery Root and Cauliflower Mash

Believe it or not, this dish actually tastes like real rich mash potatoes!  This silky smooth mash is full of vitamin C and phytoestrogens to rebalance your estrogen levels.  It contains about 17% protein and with it's starch content, it will sustain you for hours.  Celery Root is also known as celeriac.

Ingredients

1 - Medium head cauliflower, coarsely chopped

1 - Medium bulb of Celery Root, peeled and top cut off.  Cut into 1/2" cubes

1/2 cup - Organic, grass-fed, Bone Broth or filtered water

1/3 cup - Ghee or Grass-fed butter

1 Tbls - Braggs Apple Cider Vinagar

1/2 Tbls - Truffle salt or Redmonds Real Salt


Directions

1)  Place the cauliflower, celery root and bone broth in a Dutch oven or large pot.  Cook covered over medium-high heat for 15 minutes or until vegetables are "just" soft.

2)  Remove the pot from heat and allow to cool for a few minutes.  

3)  Transfer the vegetables only to a blender. 

4)  Add the ghee (or butter), cider vinegar and salt.  Puree until silky smooth.

Notes

Keeps well in the refrigerator for up to 5 days
