Refrigerate your watermelon pieces the night before and it will make the drink that much cooler and refreshing. Also, this recipe does not use that much sugar as most watermelons (especially seeded ones) tend to be really sweet. But you be the judge on the sugar/honey.

4 cups of seeded, cubed watermelon
1/2 cup of cold spring water
1/2 cup of raw cane sugar or 1/4 cup of raw honey (I find the Orange honey is best in this drink)
4 slices of lime
24 leaves of mint
1 cup of ice
Step 1
Puree the watermelon and water in a blender until smooth then add sugar to taste (this is the agua fresca)
Step 2
Cut the lime slices in half. Place a half lime slice into each of 8 glasses along with 3 mint leaves.
Step 3
Crush with a cocktail muddler, then fill each glass with ice.
Step 4
Pour in the watermelon agua fresca, and stir before serving.
