Raw Peach Pie

If you really want to taste the full flavor of a peach in a dessert you could probably have for breakfast, try this peach pie recipe.  Nice thing about this pie - no baking!!  It is completely RAW and completely DELICIOUS!

NOTE: You will need a food processor for this recipe.

Ingredients

Crust

1-3/4 cup of raw almonds (2-1/4 cups almond flour)

1 tea cinnamon

1/8 tea nutmeg

4 Medjool Dates, seedless

Pinch of Salt (Redmonds REAL Salt)

2 Tbls Raw Honey or Agave

1-2 tbls Grapeseed oil

Filling

4 medium to large peaches

1/8 tea of nutmeg

1 tea cinnamon

1Tbls coconut flakes

4 Medjool Dates, seedless

1 Tbls Raw Honey



Directions

  1. Finely chop the almonds in a food processor or measure out your almond flour.
  2. Add the rest of the crust ingredients, and mix thoroughly.
  3. Spread the dough out evenly in the bottom of a pie dish or quiche dish and press in place.
  4. Put 2 peaches in a food processor or super blender and finely chop.
  5. Add the rest of the filing ingredients, except for the last 2 peaches.  Blend thoroughly, and remove from the food processor.
  6. Slice the remaining 2 peaches and arrange them neatly on top of the crust.
  7. Pour the filling over the top of the sliced peaches making sure the filling is evenly distributed over the entire pie.
  8. Your Done!!  Enjoy!!

Notes

When you serve this pie, the crust will probably not hold together.  It will look more like a delicious peach crisp on the plate but, will taste like a wonderful peach pie.  Full of flavor and all of the nutrition from the raw fruits and nuts.
