Poached Egg with Greens

The egg in this recipe can be poached or fried in Ghee depending on the time you have in the morning.  I have also tried it with a soft boiled egg, cut in half top to bottom after it is pealed.

Cooking Time

5 - 8 minutes

Yields

1 serving

Ingredients

½ med red onion, diced

1-2 cloves garlic, minced

1 tbsp coconut oil

1/2 cup finely chopped broccoli (optional)

1/2 cup brussels sprout leaves and thin slices

2 cups each Swiss chard or spinach (chopped in small pieces)

1 tsp tamari

½ avocado, sliced

1 egg

¼ tsp red pepper flakes

Directions

1. Sauté onion and garlic in coconut oil until translucent, 5 minutes over low to medium heat.

2. Add broccoli and Brussels sprout leaves; sauté 5 minutes more.

3. Add chard, spinach and tamari; cook until greens are a shinny green and slightly wilted, 2 minutes.

4. Arrange avocado on the plate.  

5. Spoon the greens mixture into the middle of the plate and top with fried egg and red pepper flakes.

Notes

The egg can be fried in the coconut oil left in the pan after the veggies are plated.  If you are poaching the egg or soft boiling it, you can do this while the greens are cooking.
