Fruit Porridge with Celery

It sounds a little unusual to have celery for breakfast, but it gives the porridge a distinctive taste you will really like.  Besides, if you know you will be working up a sweat during the day, this porridge will boost your electrolytes because of the celery.

NOTE:  You will need a food processor or Ninja/Vitamix type Blender for this recipe

1-2 Servings

Ingredients

1 Celery Stalk (2 if you like the taste of celery), chopped into large pieces.

1 Kiwi, chopped into large pieces

1 Small apple (any variety), chopped into large pieces

1 Medium pear (any variety - Red or Bartlet are best), cut into large pieces

1 tea Cinnamon

1Tbls Flaxseed (fresh ground or purchased ground)

2 Tbls Chopped nuts (walnuts, pecans, almonds)

Directions

  1. Blend the celery and fruit in your blender or food processor, adding a little at a time.
  2. Add the Flaxseed and "pulse" your blender to mix it in well.
  3. Pour your mixture into your bowl and top with cinnamon and nuts.

Notes

Treat this porridge like you would any other breakfast cereal by topping it with a variety of goodness.  This can be additional nuts, seeds (pepita's, sesame), you can even have it with a bit of homemade yogurt or kefir.
