Detoxing Beet and Carrot Salad

The beets in this recipe support the liver's methylation pathway by helping detox excess estrogen, dopamine, histamine and heavy metals (all toxins).  Carrots help produce more progesterone (which we can always use in our older body) and bind the antagonistic estrogen metabolites (linked to hormone dependent cancers and breast cancer) so they can be removed from the body.  This salad is high in natural sugars, so be sure to eat it with a piece of protein like chicken, fish or lamb.

4 to 6 servings

Ingredients

SALAD

2 cups beets, peeled and shredded

2 cups carrots, unpeeled and shredded

1 cup walnuts, roughly chopped

1/4 Flat-leaf parsley chopped

DRESSING

1/2 cup extra virgin olive oil

Freshly grated peel of 1 orange

1/4 cup freshly squeezed orange juice

2 Tbls apple cider vinegar

1 tea ground cumin

1 tea REAL salt (Redmond brand)

Directions

1)  Make the salad by combining all of the salad ingredients in a large bowl.

2)  To make the dressing, place all the dressing ingredients in a small canning jar.  Seal the lid and shake until will combined.

3) Pour the dressing over the salad and toss until will coated.

40 Serve at room temperature or chilled.

Notes

Keeps well in the refrigerator for up to 4 days.

If making this salad to be a jar salad.  Divide the dressed salad between 4 jars, seal and refrigerate.
