This simple recipe is a wonderful salad for your picnic basket. You might even like to change it up a bit by adding fresh cherry tomatoes or other seasonal vegetables. There is no dressing so the flavors come from the vegetables you have put together and the flavors from the herbs.

1. Heat the Ghee over medium heat in a large sauté pan. Add the corn, and cook until just slightly browned. 5-7 minutes stirring occasionally.
2. Mix together all of the other ingredients in a large bowl and then add in the browned corn.
3. Toss together well and serve warm or place in the fridge to cool and pack in your picnic basket.
You can add a bit of avocado to this salad but wait to add until you are serving it.
